Renting a car and heading over to Zion National Park for an afternoon is well worth the effort. Only about 2 hr drive, significantly cooler temperature wise than Vegas and the lots of awesome little day hikes to choose from.

Our approach was to get off the Strip during the day and go see stuff outside of the city. Gives you a break from the madness

+1 Except, stop at Over the Edge in Hurricane to rent bikes and go hit Gooseberry Mesa for a couple laps. After two days in Vegas you will be gagging to get the hell out.
