There's that trail out in the valley with great views, one for sure in Pemby and apparently some trail in Whistler, but is there anything else within an hour or two of the Shore that has some good views even if it means a sit down or stopping?
We don't know what our limits are, so to start something with the idea of being limited actually ends up limiting us.

Maybe not spectacular but I think the view point on Eagle is pretty good,looks west over the city towards Georgia straight. The view from the east side of Burke is pretty good to. Overlooking Pitt River, east up the valley and Baker. At night I find that one nice. I suppose you’re talking something with more elevation though. Not a ride but there are some awesome views from Golden Ears especially if you summit.
"Room with a view" in Squamish? Several other of the slab trails in that area have good views across the estuary and to the Chief.

The lookout mid way down Boney Elbows in Squamish has a beautiful view of howe sound
Not local but you can’t beat the alps or dolomites for views. A gravel road or gondola up to the peak of most mountains with a restaurant/bar at the top. BC’s wilderness is awesome but we certainly lack in amenities our peaks.
How is the S2S gondola doing? That and P2P are the only comparisons I can think of, but they are both overcrowded due to the scarcity of similar attractions.
SSC has some great views according to my insta-feed. Mostly off logging roads though. Time for a gravel bike?
This one's fairly easy to get to. Just a crappy old road leading to Lower Mad Hatter, but the view is killer (Tantalus Range and Squamish Valley) just before you go into the trees. Then come down MH/Ed's Bypass.

looks like the northside connector road would have some good views along a decent chunk of it
