Pretty much what I was thinking.
I cover the whole bird in bacon and convection roast it. When I'm carving it there's almost a fist fight for the bacon-fused-turkey-skin bits that fall off. Keeps the bird sealed in bacon goodness.

i'll have to get my pics tomorrow - but my son and i were fighting for the bacon blanket on our turkey tonight. he started shoving whole pieces in his mouth and running away - pretty crafty for a 3 year old

Do the bulk of the cooking covered. Weave the bacon "dreamcoat" and drape on the bird uncovered for the last 45 minutes.
i cook it with the bacon on the whole time, but i do leave the bird covered except for the last hour.
