Depends where you're getting your sugar. Canada produces sugar from sugar beets
whereas most of the sugar comes from cane. Evaporated cane juice is quite a bit
different from white sugar (from cane) in that it is not as processed as much. Using, a
lot less water (about 30,000 gallons/1 pound of sugar), heat and energy in the
refining process. I think there's more in transport costs because the cane juice
isn't as concentrated as sugar is. This is the reason why almost all of our orange juice
and many other juices comes from concentrate, it takes a lot less energy to concentrate
at the source, transport it then add water at the destination…water is heavy to
transport.
I've also heard (from the interwebs) that your body can digest cane juice (and other
fruit juices) than it can refined sugar and corn syrups.
