Olive oil and chili flakes in a pan, start on low, take it off when the colour starts to change red/orange, leave to cool, strain if you want (or not), pour in a bottle.

I actually love Texas Pete's hot sauce even though it's about as generic as it gets. I just love it.

I still remember going to a Thai place for one of the first times and proudly telling them it can't be too hot.  Holy shit was I put in my place.

That said, I've recently learned there is a world in between that and the commercial world of "spicy". 

I'm looking forward to this thread a lot.

We've been going to The Pepper Palace at Tsawaassen Mills the past couple of years. The staff there definitely know their products and give good direction as to what your palate is wanting. There is another place on Denman St off of Robson St called Lucifer, not as well stocked and varieties as The Pepper Palace but enough to get you started.

I like Melinda’s XXX. Probably not all that adventurous, but it is tasty sauce.

that link to Hot chilli farm on the Island sounds great, i'll go looking for them. 

i think as a starter it's great to have about 5/6 basics on hand at any given time. something basic Mexican like Cholula or Valentina, good old Tobasco cause it's awesome, a tin of real chipotle peppers is quite amazing if you haven't tried them, Sriracha a solid Thai style staple thats good on almost anything, a quality horseradish sauce on any beef is incredible, and you have to get some form of Habanero forward sauce. 

the taco joint in Cumberland makes a hab/garlic/pineapple mix that's to die for. i don't know any commercial hab sauces but should find one i like soon as we're almost out. 

add Grace jerk seasoning (jar) and you've got a very wide assortment of flavours. most of these can be found widely and there are so many good ones i haven't even discovered.

If you catch him at a farmers market he's usually offering up samples of everything.

I've been dabbling in making hot sauces lately. mostly due to exchange rates and trying to order the sauces to replicate the Hot Ones hot sauce lineup. paying 25 CAD for a bottle of the Fiery Chipotle was not on a 'must do' so i started around to make a clone based off the ingredients list. that sauce is awesome, and the pineapple in it with the smokey chipotle and the fruity habanero is great. every time i make a batch i have a dozen orders to fill for friends that want a bottle.

that said, i keep the cupboard at work stocked with sauces and we get wings from costco to recreate the hotones lineup. the last dab xxx is so good, and da bomb is the worst thing i've had to eat... 

i also started making fermented hot sauces, out of any pepper i could get my hands on. thankfully lots of people plant some pepper plants for the lolz and realize they cant eat a kilo of Carolina reapers, so i make sauce, give them sauce. I use the silicone mason jar kits and 1l jars. There is tons of info out there on the internet. plus it's salt and water and peppers. then add your flavour / acid in the end.

i recommend playing around and making some sauces.
