I read somewhere on Reddit that Guinness has portion of brett added to the recipe as well - so nitro + brett + a weird water profile and it's an uphill battle to replicate. I've brewed a few of Dan's AG recipes and have always been happy with the results - I say go for it.

Ive not done an AG recipe, and dont have all the gear (yet). I'll try the Dry Irish Stout and see how the end product turns out.

How are y'alll accurately measuring alcohol/vol? My OG/FG estimates with hydrometer say ~5%, but my "mellow" oatmeal stout kicks like a mule. SRSLY, flavour and punch like a Russian Imperial. Not complaining, just more hammered than ususla asnd want to understand.

PinkRobe - We'd need a bit more info… Extra or All Grain? Recipe would help. Are you hitting your OG readings? Are you adjusting for temp of your wort/beer when measuring. What's your efficiency like?
More information would help. Throughout the boil I use a refractometer (temperature compensated) to measure SG and OG. I'll take one more reading before transferring to primary just to make sure there's no temperature issues. After fermentation I'll use the hydrometer.

I haven't brewed since October last year but in the last two weeks I've made two Belgian beers; 10gal of golden strong and 5gal of Wit with lemongrass, coriander and ginger. Think I'll make an IPA in two weeks and throw it on top of the golden strong yeast cake. I'm back!!!

Frozen lagers leaking beer from the caps - leave them or recap them??? They're bottle conditioned for 6 weeks already and were nicely carbonated already, so probably won't recarb themselves if I recap.
