I used Stans strips on 721's and had no problems with Maxxis UST, regular or single ply tires.
Mine were always deflating, with the ghetto option.

721's are fine hoops but the narrow profile means your tire becomes less stable under side loads. I don't like how much the tire's beads are pinched. I like a wider profile (more stable tire). They also get dented really easily too.

they don't like you.
823's worked very well tubeless with non tubeless tires of pretty much any brand though.
also to be noted, i think that the 823 has a stronger side wall then the 721….
I think these points are the clincher for me to get the 823 over 721.

721 = light (590g), 21mm inner width
823 = heavy (715g including proprietary nipples), 23mm inner width
729 = midweight (675g), 29mm inner width and low profile (ie. most "stable" in theory)
they're all potentially "strong" rims if built well.
7 series uses softer metal, so will dent rather than pinch flat more often than not.
8 series uses harder metal which are tough as hell and very dent-resistant, but you may get more pinch flats (including maxxis UST tires as dave mentioned).
so if you hate denting or want to run tubeless, get the 823.
if you want good lateral tire stability, get the 729.
if weight is biggest priority, get the 721.

yeah, that's more like it. i forgot to add the nipply bits. corrected in above post.
also many people have had good luck with other brands, like alex supra D (disparate weights, but usually around 600g, 25mm inner diameter).
