Can anyone tell me what parts I need to convert a Shimano XT 11spd Ispec II shifter to a normal handlbar mount? I thought it might be as easy as just buying a bracket or changing a cover but it doesn't seem so easy.

I think this is one of those cases where its easier and possibly cheaper just to buy a new XT shifter. If the mount exists (not sure it does from Shimano), it wont be much cheaper than getting an entire new shifter.
