Whatever works best for you. Personal preference.
i find when i setup my brakes for one finger its more tiring than if i set them up for 2. for normal trail riding, 1 works great for me…but i get just to tired with one finger at whistler.

how does one setup a bike for 1 or 2 finger levers??
if you move the lever in really far you can only get one finger on
or just buy levers meant for one finger
slide the lever in on the bar and dial it in closer
on my hayes I have the push rod adjuster thing dialed in quite far so the lever is pretty far away from the bar and then I one finger

i say one for whistler ….because your hands ten to get tired through out the day so u have a bit more grip with one more finger on the bar.
i 1-finger everything….
