2.4 or 2.35 will probably be awful on mid fat size rims though.
The minion in 27.5*3 will probably be slow rolling, but from the sounds of it - so are you ;-)
Minions are available in 2.8 and 3.0, I don't get the love for the mid fat honestly, so I'd probably get the 2.8 for a little firmer ride and a little less weight. What's the max tire size on the Roscoe?

Is that colour custom 'cause I don't recognize it from their web page? Chromag sent me a pfd of their 3 new WA colours for '19 and they don't look anything like that.
It's a 2018 color, Grey/Oxide. The 2019's look great, but last I heard they weren't going to be available until June.
What size is that. And how tall are you ?

There's always plenty of RS Pikes in the Pinkbike Buynsell. Easy and cheap to convert between 130-160. I feel like on a HT if there's TOO much fork up from it becomes weird handling - BB too high, shortens up the reach, slackens the seated climbing position. I'd probably go with a Pike at 130 or 140.
I reckon you'd be better off with more quality suspension than more travel. But that's only IMO.
Just like with freeride bikes back in the day, those tires will suck. Upgrading to some better rubber will make a big difference - sturdier sidewalls, better tread, better rubber. Even if it's just SE4 27.5*2.8 from where you picked the bike up from. But winter riding is rarely best riding.

The new Debonair air spring is great if you want to run a shorter travel more progressive fork. I have mine at 120mm and stuffed with tokens and rarely bottom it out (usually have a 1/2" spare).
Quality >> Travel IMO
