I've thought about getting a BF because I live in Europe right now and taking a full-size bike on a long-distance train is a big hassle, but I think I'm just too tall for them. And I'm concerned about the compliance without being able to test-ride one.

The touring model BF's are stiffer and meant to carry more weight as you would expect. Back when I was more on top of BF tech they had a heavy weight rider option to stiffen the touring frames further as needed. They've built bikes for all sizes and shapes of people so it you are interested it's worth asking. They'll let you know what the best option is for your needs.

I'm 5'11" and was ~180lbs out of the shower when I had a BF touring bike. It rode well for me.

Not a folding bike. But guy I know took his gravel bike and had the S&S couplers put on it so he could get it into a smaller package for travel.
