Pretty sure it's because the cold can theoretically affect the sealant.

I have first hand experience with this. Had some stubborn Maxxis Non-UST tires that wouldn't seal with my home compressor on my Havoc UST wheels. Decided to use CO2, the beads pops right on and the tire/rim gets really cold. Kinda figure no biggie and go out for ride that afternoon. Luck would have it that I ripped the sidewall of the rear tire and no Stan's come spewing out at all, which I thought was odd. Take the tire off the rear wheel to put a tube and the Stan's was in an amalgamated ball the size of baseball. Looking back I should have kept it as a souvenir instead of throwing it the bushes.
Moral the story stick to a compressor. I'd sure it didn't help that I held the CO2 cartridge upside down.

Found this in my tire tonight.
This tire has been on my DH bike for 8 months or so. Used CO2 once on it about 6 months ago. Not sure how long the ball has been in there. Tire was completely dry on the inside. Rear tire was also dry but with no ball of Stan's/Caffelatex.
First I've ever heard hitting Stan's with CO2.
Anyway I'll throw my name on the 65 wait list just to piss some of you off!
