was that "we like our brakes" pic taken just to show the sun shining through Morgan's beard? Very artistic. Great review too.
I second the need to align Elixirs by eye - the squeeze and cinch method doesn't seem to work very well. The HS1 rotors also seem quieter after getting wet than the G3CS.

the squeeze and cinch method has rarely worked for me on the 100s of sets of Juicy and Elixirs I have installed

if you remove Avid's CPS (conical mounting washer) and go with flat washers of the same stack height, its actually much easier to align the caliper to the rotor, although the disc brake adapter needs shimming off the frame or fork to allow lateral adjustment (just like older brakes)

however, with many bikes now having post mount forks (and post mount rears) you have to stick with Avid's CPS and eyeball the caliper / rotor whilst adjusting, and often readjust a couple of times to get it right, I'd recommend a nice white floor under your workstand to assist with this bothersome workshop chore ;)

Morgan's got the most majestic beard I've ever seen. Sometimes it looks so soft and inviting, and I want to touch it - but I'm always afraid to ask :O
