You could totally do this, but I have so many questions.
1) Why?
2) What would be your starting point?
Are you scabbing together 7 random sprockets onto a hyperglide cassette body? What derailleur are you going to use? What cassette would allow you to tear it apart for the donor cogs that you need? And what are you using for spacers? At what point does dropping a chain between your larger spacings become a problem?
Perhaps more appealing would be adapting an old 11 speed derailleur to SRAM's 8 speed ebike cassette? Or something?
