I'm sure you could tear the remote apart and custom fab things into your handlebars, yes. That level of tinkering is above my paygrade and my shorts aren't short enough, though.
You probably could program it like that for your dropper, but 1) it'd be overkill, the shifter is much bigger/heavier than it needs to be to pull a dropper cable, and 2) I'll bet speed is an issue - you need to pull and release the cable very quickly. Something like a small linear actuator or something might be better than the screw system here. And it'd be nice if it was all concealed?
