I've met riders who have tried both settings but prefer the shorter setting but there is truth to what you say - most folks running the chainstays in the shorter setting have not tried the longer option and most folks who try the longer option stick with it.
Something to think about is that the longer option on the 27" bikes delivers the same chainstay length as the shorter option on the 29" bikes, so there is a certain level of size specificity going on. I do think, in the spirit of this article, it would be very interesting to see Rocky do a longer hop-up seat stay assembly a la Guerilla Grav and then to get feedback from riders running something 10-20mm longer.
