Interesting on the pedals. I've currently taken the pins out of junior's (5) pedals because I was worried that shin / pedal contact would be bad. Wondering if I should put them back in again.
In terms of cycling infrastructure I used a [FollowMe](https://www.trucavelo.com/products/followme-tandem-parent-child-bicycle-coupling-followme-tandem-atelage-pour-velo-suiveur "FollowMe") for a couple of years.
