Somewhere between McGyver and Packrat, depending on the length of the ride and
the distance I'd have to walk out at what time of day.
An oddity that I carry is a spare rear derailleur as single speeding it can
really suck if there's lots of up and down to get home and adjusting chain
length, hi/low limits, etc. takes so much time versus have a low-end $20
derailleur to slap on.
Other than that, I carry a tube, pump, patch kit, multi-tool w/ chainbreaker,
zipties, relevant hanger, a few links of relevant chain, and a spare
derailleur cable.
